La vendemmia è rigorosamente manuale, con una resa di 50 hl/Ettaro. Dopo la diraspapigiatura, la fermentazione avviene a circa 28/30° in acciaio per 15 giorni, poi affinamento in botti di rovere di slavonia per circa 24 mesi.

In particular, I tried it on cannelloni castelmagno and fontina.
